Although it lies down greatly on the piano, I still feel there's still something missing in the final sound. The way I see it as an instrumental piece, Symphony would look the best played in a duet of piano and a string instrument, cello or violin, for example. The original composition has a really rich combination of instruments, so if you want to play it on your own without orchestration, the choice of piano+violin would work the best and closest to the recording. In general, the mixture pop, electronic and classical music works really cool in here.
